A modern arrangement of old-fashioned hammer knives with excellent corrosion resistance. The KASUMI Hammered collection is a three-layer kitchen knife that uses VG-10 stainless steel as the inner core and SUS410 grade stainless steel as its exterior, which provides excellent corrosion resistance.

A paring knife is a compact knife with a smaller blade designed for precision tasks. Its key uses include peeling, hulling, and coring fruits and vegetables, as well as deveining shrimp, trimming fat from meats, mincing garlic, and crafting detailed garnishes.

Kasumi which means “mist”, refers to the haze or cloudy look of the soft iron body of the blade, which provides contrast to the high gloss appearance of the carbon steel. Skilled Japanese Craftsmen forge Kasumi knives by joining a piece of soft iron with a piece of carbon steel. After forging, hammering, and shaping, the carbon steel becomes the blade’s edge, while the softer iron portion becomes the body and spine of the blade. The end result is an extremely sharp Kasumi knife that is both easy to sharpen and holds a sharp edge longer.

Kasumi Tora knives are handmade by knife-making specialists and crafted in the same manner as traditional Japanese swords. The knife is carefully finished, piece by piece, throughout its process by the handwork of skilled craftsmen.
